好事发财 [ 蚝干, 干贝焖发菜 ]

干贝五粒,冬菇5朵,发菜,1小把,葱3根,姜1小块,蚝干150克,酒1汤匙,糖1茶匙,蚝油3汤匙,太白粉1茶匙,麻油1/2茶匙。
先把干贝和蚝干洗净,用水浸泡2-3小时。冬菇洗净,用水泡软,沥干水分,去蒂切片。发菜泡软后沥干后加入2滴油,揉至松散后再以清水洗净。葱切段,姜切片。
先把蚝干洗净,加入姜,葱和酒者煮10分钟后,盛处沥干水分。
起锅热油3汤匙,放入冬菇和剩余的姜,葱炒香,加入糖炒至溶化,再加入蚝油及两杯水,煮滚后加入干贝以小火煮20-30分钟,加入蚝干继续煮20分钟,加入发菜再煮2分钟,加入调好的太白粉水勾芡,最后淋上麻油即可。

Dry scallops 5 pieces, mushroom 5 pieces, black hair moss 1 small bundle, spring onion 3 stacks, ginger 1 small piece, dried oysters 150g, wine 1tbsp, sugar 1 tsp, oyster sauce 3,tbsp, cornstarch 1 tsp, sesame oil 1/2 tsp.

Rinse scallop and oysters soak in water for 2-3 hours, rinse black mushroom and soak in water till softened. Pinch dry, remove the roots and cut into slices. Rinse black hair moss and add 2 drop of oil to rub till loosened before rinsing. Slant-cut spring onion into sections and cut ginger into slices. Rinse dried oysters and Boil for about 10 minutes together with 1 stalk of spring onion, few slices of ginger and wine. Remove the dried oysters. Heat up 3 tbsp of oil, fry black mushroom and the remaining spring onion and ginger till fragrant. Add sugar and fry till it dissolves. Then add oyster sauce and 2 cup of water, bring to a boil before adding scallops. Cook over low heat for about 20-30 minutes. Add dried oysters and continue to cook for another 10 minutes. Add black hair moss and cook for 2 minutes further. Mix cornstarch with 1 tsp of water and thicken the dish with it. Drizzle sesame oil on top before serving.
